Alberta Rhubarb Cake with a Rhubarb Compote

Growing up, my mom always had a huge rhubarb plant in her garden and we would be eating it one way or another all summer! We would have jars of rhubarb sauce in the fridge that we could pour on our ice cream, pancakes or cakes at a moments notice. Or we would bring bags of it to my memere’s house and come back with fresh baked pies!

Everything my mom or memere made from this amazing plant was fantastic but there is one thing that I will always remember having – Alberta Rhubarb Cake. It always reminds me of spring and most of all, reminds me of home.

My mom got this recipe from her mom and from there I have no idea where it came from! I’ve changed the recipe up a little by adding pecans instead of walnuts (I don’t like walnuts), and made it with half whole wheat flour instead of 100% all-purpose flour; and then I smothered it with a rhubarb compote! This compote is inspired from one of my newest cookbooks – Bar Tartine – this is one of the coolest cookbooks! If you are interested in fermenting or drying flowers or making alliums then I highly recommend this book! Stat by creaming the margarine and brown sugar together. Blend the egg with the vanilla and then add to the brown sugar and margarine mix. Add in the flours and baking soda.

Combine the lemon juice and milk and add to the mixture and mix well. Fold the rhubarb into the mixture.

Pour mixture into a greased 9×13 pan. Blend sugar, pecans and cinnamon in a small bowl and sprinkle on top of the batter. Bake at 350 degrees F for 45 minutes.

Rhubarb Compote:

Toast the coriander seeds for a couple minutes, just until they become fragrant. Grind them in a spice grinder or mortar and pestle and set aside.

Combine the rhubarb, honey, brown sugar, lemon zest and lemon juice to a sauce pan on medium heat and bring to a simmer and stir to dissolve the sugar.

Simmer until the rhubarb is tender and the liquid is reduced by half for about 10 minutes. Add in the ground coriander and cinnamon.

Pour warm compote onto the cake and enjoy!!

Sweet rhubarb cake that's a family recipe from my home province!

Ingredients

Rhubarb Cake

  • 1/2 cup margarine
  • 1 1/2 cup brown sugar
  • 1 egg beaten slightly
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tbsp lemon juice
  • 1 cup milk
  • 2 cups chopped rhubarb
  • 1/2 cup chopped pecans
  • 1/2 cup sugar
  • 2 tsp cinnamon

Rhubarb Compote

  • 2 cup chopped rhubarb
  • 1/2 cup honey
  • 2 tbsp brown sugar
  • grated zest and juice of two lemons
  • 1/2 tsp ground cinnamon
  • 1/4 tsp coriander seeds

Instructions
