
Chicken and Zucchini Ricotta Ziti Pasta
I love pasta and I love trying out new pastas, so when I found this lentil ziti by Tolerant Foods, from Costco I had to grab it and try it! On top of that I had a Spud delivery that had three zucchinis in it, meaning I needed to incorporate zucchini in a recipe soon. Zucchini and pasta go together quite well and adding chicken, tomatoes and ricotta cheese just seemed logical!

I also had purple onion and garlic scapes in my spud box, so I added them into my pasta sauce as well!
You can use any pasta you choose for this recipe, of course, but the lentil ziti is quite nice and packs a lot of protein and fibre in your dish!
I sautéed all of the vegetables with olive oil to start.
Meanwhile I seasoned and baked the chicken in the oven over a layer of sliced zucchini.
After the vegetables were soft from sautéing, I added in the ricotta and diced tomatoes; gave it a good stir and let simmer for about 10 minutes.
The chicken and zucchini slices baked for about 30 minutes, until the chicken was cooked through. I then added a scoop of ricotta to each chicken breast, (because who doesn’t love more cheese?!) and baked for another 5 minutes.
To plate, place baked zucchini slices on a plate next to a serving of ziti pasta. Place the baked chicken on top of the pasta and top the whole dish with the zucchini tomato ricotta sauce. Grate
fresh parmesan cheese over top of the whole dish and enjoy!

Chicken and Zucchini Ziti Pasta
Ingredients
- 4 chicken breasts
- olive oil drizzle
- salt and pepper
- 1 zucchini sliced into wheels
Sauce
- 1 zucchini chopped
- 3-4 garlic scapes chopped
- 1/2 purple onion chopped
- 2 Tbsp. olive oil
- 1 cup ricotta
- 1 can diced tomatoes
- Grated parmesan cheese
Instructions

Preheat oven to 350 degrees Fahrenheit.

Layer zucchini wheels in the bottom of a baking dish. Season well with salt and pepper and drizzle with olive oil. Place chicken breasts on top and season well with salt and pepper. Drizzle more olive oil over chicken breast. Put in oven and bake for 30 minutes.

Once the chicken is cooked through add a scoop of ricotta to each chicken breast and bake for another 5 minutes.
Sauce

Sauté all of the vegetables with olive oil.

After the vegetables are soft from sautéing (about 5-7 minutes), add in the ricotta and a can of diced tomatoes; stir and let simmer for about 10 minutes.

Cook pasta, following the directions on box.

To plate, place baked zucchini slices on a plate next to a serving of ziti pasta. Place the baked chicken on top of the pasta and top the whole dish with the zucchini tomato ricotta sauce. Shred fresh parmesan cheese over top of the whole dish and enjoy!
