What is your favourite meal of the day? Mine is easily breakfast. But it has to be a savoury breakfast. None of the sweet syrups, sugary berries or whipped cream for me! I want salty, fatty bacon and sausages and creamy egg yolks please! However, if I ate the way I really wanted all the time, I would be having some weight problems, so to lighten up my savoury breakfast craving, I made these chicken breakfast sausage patties! They are lower in fat since I am using ground chicken, opposed to the typical ground pork. As well they have lots of savoury herbs and spices in them with just a touch of brown sugar sweetness. Pair these up with some perfectly fried eggs or throw them onto an egg sandwich with whole wheat English muffins! Whatever way you have it, I am sure you will enjoy these lightened up chicken breakfast sausage patties!

To start I put my ground chicken in one bowl and set aside. I mixed together all of my herbs and spices in a mortar and pestle. You alternatively can use a spice grinder, or simply use already ground herbs and spices.

Next I incorporated the ground herbs and spices into the ground chicken and mixed well until the spices were evenly distributed throughout the meat. I added in a tablespoon of olive oil for moisture and mixed well. 

Shape the chicken breakfast sausage mixture into small patties.

Refrigerate chicken breakfast sausage patties until you are ready to make breakfast – the longer they sit (overnight is perfect) the more the flavours of the herbs and spices will meld. 

Once ready to make breakfast, heat 1/2 tablespoon of olive oil in a frying pan on medium heat. Place the chicken breakfast sausage patties into hot frying pan and cook until browned on each side, and the middle is no longer pink. Cooking time will vary based on the thickness of the patty – I made four patties and it took about 7 – 8 minutes per side to cook thoroughly.

Ingredients

  • 1 lb. ground chicken
  • 1 tsp. salt
  • 1 tsp. ground black pepper
  • 1/2 tsp. Aleppo chilies
  • 1/2 tsp. sage
  • 1/2 tsp. brown sugar
  • 1/2 tsp. fennel seeds
  • 1/2 tsp. caraway seeds
  • 1/2 tsp. thyme
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1 Tbsp. olive oil
  • 1/2 Tbsp. olive oil for frying

Instructions

  1. Put the ground chicken in a mixing bowl and set aside.
  2. Mix together all of the herbs and spices in a mortar and pestle. You alternatively can use a spice grinder, or use already ground herbs and spices.
  3. Add the ground herbs and spices into the ground chicken and mix well until the spices are evenly distributed throughout the meat. Add in a tablespoon of olive oil for moisture and mix well.
  4. Shape the mixture into small patties. I was able to make four small patties.
  5. Refrigerate patties until you are ready to make breakfast - the longer they sit (overnight is perfect) the more flavours of the herbs and spices will meld.
  6. Heat 1/2 tablespoon of olive oil in a frying pan on medium heat. Place patties into the hot frying pan and cook until browned on each side, and middle is no longer pink. Cooking time will vary based on the thickness of the patty - I made four patties and it took about 7 - 8 minutes per side to cook thoroughly.
  7. Serve for breakfast or freeze and save for later!

  1. THANK YOU! I’ve been looking for a new chicken sausage recipe to try. I have never heard of Aleppo chilies. Maybe I’ll substitute ancho chili powder instead??? Thanks again.

  2. Yes I think ancho would work nicely as well! I never heard of Aleppo until a lady in a spice store recommended them – I use it all the time now!! Thank-you!
