
Turkey Stir-fry on Ramen Noodles – Easy Weeknight Meal
I am always looking for great meals to have after work on weeknights that are simple, quick and healthy. I recently picked up a bag of ramen noodles by Lotus Foods from Costco that are made from brown rice and millet. The first time I tried them was in my Turkey Ramen Noodle Bowl and they are pretty darn good! I admit, I don’t have a lot of experience with ramen noodles but I really like these ones! This turkey stir-fry is essentially the same idea as they turkey ramen noodle bowl, except with stir-fry sauce instead of the broth.
I used turkey breast, but you can do this with chicken, pork or beef! The flavours will work with any poultry or meat. For the vegetables I had broccoli, bell peppers and mushrooms on hand, but feel free to load it up with more vegetables! Can’t have too many veggies – add in baby corn, water chestnuts, bamboo shoots, bean sprouts, celery, carrot, onion – anything you need to get out of your fridge! Don’t tell me I am the only one who does that?!
Turkey Stir-Fry on Ramen Noodles
In a frying pan (or a wok) heat up sesame oil. Fry the garlic and ginger, stirring frequently for about 5 minutes. Add in the turkey breasts and fry until cooked through, stirring frequently, for about 10 minutes.
Meanwhile, in a small bowl combine the sauce ingredients and mix until combined. Also, start the noodles according to package directions.
Add in the vegetables and continue to stir-fry for about 5 – 7 minutes.
Add mixed sauce to turkey stir-fry and continue stirring. Sauce will thicken up. Serve over cooked, drained noodles. I also topped my turkey stir-fry with roasted bok choy and sprinkled some sesame seeds overtop! They goes nicely with any stir-fry! Enjoy!

Ingredients
- 2 tsp sesame oil
- 2 clove garlic minced
- 1 inch ginger shaved
- 2 turkey breasts cut into chunks
- 1 cup broccoli florrets
- 1 bell pepper sliced
- 1 cup mushrooms quartered
- 2 squares ramen noodles
Sauce
- 1/4 cup water
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon brown sugar
- 1 teaspoon cornstarch
- 1/2 teaspoon sriracha
Instructions

Heat up sesame oil in frying pan or wok. Fry the garlic and ginger, stirring frequently for about 5 minutes.

Add in the turkey breasts and fry until cooked through, stirring frequently, for about 10 minutes.

In a small bowl combine the sauce ingredients and mix until combined and set aside.

Start the noodles according to package directions.

Add in the vegetables to the turkey and continue to stir-fry for about 5 - 7 minutes.

Add mixed sauce to turkey stir-fry and continue stirring until sauce thickens.

Serve over cooked, drained noodles.
