
Greek Yogurt Whole Wheat Blueberry Muffins
I’m on a muffin kick and these Greek yogurt whole wheat blueberry muffins are one of my favourite latest creations. I have been baking muffins every weekend to add to our weekly lunch snacks and have been loving them! Every week I am trying different spices with different fruit or berries and am loving every week’s new creations! This week I tried out blueberry muffins made with greek yogurt, whole wheat flour and for some spice, cinnamon. They were great! Packing one of these into our work lunches daily was one of my best ideas ever! So now I can’t go back and must always have a little muffin added to my lunch bag.
I’ve made muffins a few times before in my little baking life. I don’t know why I turn away from baking so much; almost everything I bake turns out to be at least edible! I think part of it is that I can’t be as creative as I can with cooking. But with muffins, I have been able to be very creative with the spices, fruit and other ingredients I am using! These Greek yogurt whole wheat blueberry muffins are easy to make and if you want to change the spice or fruit, that’s doable!
Greek Yogurt Whole Wheat Blueberry Muffins
I started off by getting all of my ingredients together. I wasn’t in any rush to make these so I took the time to measure out all of my ingredients into bowls and thus creating a neat photo opportunity!
And then I thought I would get all fancy with PicMonkey and make labels for all of the ingredients!
I have to admit – I probably had way too much fun organizing my ingredients and then labelling them. I am bit of a nerd in that sense. Ok, a lot of a nerd!
Once I had all my ingredients gathered, I whisked all of the dry ingredients into a mixing bowl

all of the wet ingredients into another mixing bowl

Next I folded the wet mixture into the dry mixture, using a spatula and folded until combined, basically just until the flour is gone.
Fold in the blueberries next and divide batter into a muffin paper lined muffin pan

Mix the crumble together using a fork and spread crumble on top of muffins evenly.
Bake in preheated oven at 400 degrees F for 18 minutes, or until a toothpick comes out clean. Let Greek yogurt whole wheat blueberry muffins cool before enjoying!
Greek Yogurt Whole Wheat Blueberry Muffins
Ingredients
Dry ingredients
- 1 cup whole wheat flour
- 1/2 cup all purpose flour
- 1/4 cup brown sugar packed
- 1/2 tablespoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
Wet ingredients
- 1 cup blueberries fresh or frozen
- 1/2 cup fat free Greek yogurt
- 1/4 cup almond milk
- 1/4 cup coconut oil melted
- 2 tablespoon honey
- 1 egg beaten
- 1/2 teaspoon vanilla
Crumble
- 1/2 cup brown sugar packed
- 1/2 cup whole wheat flour
- 1/4 cup coconut oil melted
- 1 1/2 teaspoon cinnamon
Instructions

Preheat oven to 400 degrees F.
