Oh hey there! I am just gonna slip this hazelnut chocolate porter chocolate cookie recipe into your inbox. I know, it’s been a while. So long, do you even remember why you subscribed to this blog? Unless you know me personally and I forced you to read my blog, I am assuming you signed up because you were interested in either Alberta craft beer or recipes made with beer, or both! The goal of this blog is to incorporate a beer that is local to me into a recipe! I will give you a few details on the brewery that the beer is from, a small review of the beer in the recipe, and then of course the recipe with said beer from said brewery!

I don’t bake a lot, but when I do, it’s almost always with beer. I have made cookies, breads, and squares. I have yet to make a cake using beer, but it’s on the list to do!

The Brewery

Today’s beer comes from Fitzsimmons Brewery, a brewery and tap room located in Airdrie, Alberta. They have been around for a few years, brewing their first beer for retail consumption in 2017. I haven’t been to this brewery yet, but you can visit their tap room on most afternoons of the week, go on a tour on Saturdays, and like most breweries now in Alberta, bring your furry friend! The Beer

You could say that this is a triple chocolate cookie since the beer used is a chocolate porter (on top of cocoa powder and chocolate chips!!) The porter Done and Dusted from Fitzsimmons felt like the perfect addition to these hazelnut chocolate porter chocolate cookies. This is a seasonal beer, offered in the fall or winter months – yes, this is how long I have been sitting on this post!

The appearance is a dark brown to black pour with loads of brown bubbly head that lingers for a while. There are notes of chocolate and coffee on the nose with some subtle earthy hops. The taste is of chocolate and subtle hazelnut and vanilla. Some spice that might be the hops I am getting. The mouthfeel is thin, which is typical of a porter. Some acidic coffee mouthfeel as well. Overall, this beer is best served warmer (never ice-cold, people!), in cooler months, and of course with a side of hazelnut chocolate porter double chocolate cookies!

The Recipe

Hazelnut Chocolate Porter Chocolate Cookies

Using a rich chocolate porter in this recipe made these hazelnut chocolate porter chocolate cookies turn out perfect!

Ingredients

  • 1 cup salted butter, melted and cooled
  • 1-1/2 cup granulated sugar
  • 2 tsp vanilla
  • 2 eggs
  • 3 Tbsp. reduced porter beer and brown sugar mixutre See instructions
  • 2-2/3 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chocolate chips Use what you like/have – milk, semi-sweet, dark, etc.

Instructions

  1. Prepping the butter: Melt half of the butter in a microwave-safe dish for 30-45 seconds until completely melted. Transfer butter to the fridge or freezer and cool until solid, at least 30 mins. If the butter is rock solid, put it back in the microwave for about 10 seconds, just to get softened. Leave the other half of the butter on the counter and bring it to room temperature. I learned this step of making cookies from a few other food bloggers, and I have really noticed a difference in the consistency of the cookie.

  2. Prepping the reduced beer mixture: Pour 12 ounces of porter beer into a saucepan and add 1 Tbsp + 1 tsp of brown sugar, and stir to combine. Reduce over medium heat until you have about 3 Tbsp. of liquid. You will occasionally have to skim the foam off the top of the beer. Let this reduction cool to room temperature.

  3. Preheat the oven to 350 degrees.

  4. With an electric mixer, cream the prepped butter, room temperature butter, granulated sugar, and vanilla until creamy. Add in the eggs and mix until just combined (not too much beating!)

  5. In another bowl, combine the flour, cocoa powder, baking soda, and salt. Combine the dry mixture to the wet butter mixture and mix until incorporated. Add in the reduced porter beer sugar mixture. The dough should be thick and sticky. Add in the chocolate chips and fold to combine.

  6. Roll the dough into balls and place it on a parchment-paper-lined baking sheet. Bake for 8 minutes and transfer to a wire cooling rack right away. Once cooled, these hazelnut chocolate porter chocolate cookies should be thick, soft, fudgy, and absolutely addicting.
