Sometimes my fridge needs a good cleaning and when I need to get rid of a good portion of produce, cheeses or meat, I will make a frittata! A frittata is an egg based dish that is similar to a crustless quiche. It is a really good way to clean out the fridge and not waste!
Below is my recipe that can be anyone’s recipe depending on what you have in your fridge. As long as you have some vegetables, some meat and cheese and eggs, you are pretty much set to make a delicious frittata! Or go vegetarian and skip the meat and add more veggies! That’s what I love about frittata’s; they are easy to make, they clean out your fridge and every one I have made tastes different.
How to make a Frittata
I just happened to be at 124 Street Market on a Thursday and picked up some of Irvings Farm Fresh lemon fennel pork sausage, so I knew what my meat base was going to be. In the fridge I had half a container of feta cheese, some parmesan cheese, spinach, mushrooms, onions and lots of eggs. My frittata ingredients were set and I am ready with a clean fridge and soon-to-be meal on the table!
Now with my ingredients pulled out of the fridge, chopped and prepped, it is time to sauté the vegetables to soften them. I put my cast iron skillet on the stove and add some olive oil, and then add the chopped onion and chopped sausage. I let it cook while stirring, for about 15 minutes until the pork sausage browns.
Once the onions are soft and the sausage browned, I add in the chopped mushrooms and sautéed them until they also get soft.
Next I add the torn up spinach and let it cook just to wilt (about 2 minutes) and then I add in the beaten eggs, the crumbled feta and sprinkled the parmesan cheese over top. I also sprinkle a bit of salt and pepper over the mixture and let it cook on the stove for about 5 min, just until the egg starts to set (you can see the eggs start to pull away from the sides of the pan).
Once the egg is starting to set, I pop it into the oven (preheated to 400) and let it bake until fully cooked – about 15 minutes. Take it out of the oven and serve!
Frittata ~ From the Fridge to the Pan
- 2 Tbsp olive oil
- 1/4 cup purple onion diced
- 8 - 10 medium sized mushrooms halved and sliced
- 3 sausage links chopped into bite-sized chunks
- 2 cups fresh spinach torn into pieces
- 6 eggs beaten
- 1/2 cup feta cheese crumbled
- 2 - 3 Tbsp. grated parmesan cheese
- Salt and pepper to taste
Preheat oven to 400 degrees.
Heat up cast iron frying pan and add olive oil. Once heated, add onion and sausage and let cook, stirring occasionally, until onions soften and sausage browns, about 15 minutes.
Add chopped mushrooms and cook until soft, another 5 minutes.
Add the spinach and stir while cooking until just wilted, about 2 minutes.
Add in beaten eggs and feta cheese. Push feta down into mixture (don't stir). Sprinkle the mixture with parmesan cheese and salt and pepper to taste.
Let cook until the eggs just start pulling slightly away from the pan.
Transfer cast iron pan with frittata into the oven and bake until cooked through, about 15 minutes.
Serve and enjoy!
