Saison Beer Sauteed Chili Shrimp
Are you looking for a simple dinner that can be made on a busy work night? This saison beer sauteed chili shrimp recipe is so quick, it is now a staple in our house. Weeknights… weekends… lunch… it is a recipe appropriate for any time of the day. We will often saute meat and/or vegetables with chicken broth instead of oil to cut down on the fat, so I thought it would be just as good to saute in beer. I did decide to add a small amount of butter, just to add some creaminess, but I am sure it would still be great without. A saison beer was my choice because they are often fruity and spicy flavoured beers that I figured would be great in a shrimp dish. I was correct!

The Beer
These saison beer sauteed chili shrimp were sauteed in Bent Stick’s Totally Stooked Harvest Saison. A stook is a group of sheaves of grain stood on end in a field, making the name of this beer completely appropriate for harvest season! The appearance is a hazy, golden yellow pour with puffy, lingering white head. The smell is of grains, pepper, and oranges. The taste is spiced bread, citrus fruit plus some orange peels, a light earthy hoppiness that isn’t over powering. The mouthfeel is of a medium carbonation, a spicy bite, smooth and thinner mouthfeel and a dry finish. Overall, after tasting this beer, I knew it was going to be perfect for these saison beer sauteed chili shrimp. This is a great fall harvest beer with everything I was looking for in a saison!
The Recipe
Serve these saison beer sauteed shrimp over a rice pilaf, plain rice, or polenta (basically something that will hold the yummy saison saute sauce that is left over), and a side vegetable, and you have an easy weeknight meal!
Saison Beer Sauteed Chili Shrimp
Shrimp seasoned and sauteed in saison beer
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tsp Spanish smoked paprika
- 1/2 tsp Ancho chilies
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp Morita Chipotle chilies
- 1/4 tsp salt
- 1 tsp butter
- 1/2 cup saison beer
Instructions

Mix all of the spices together into a small bowl and set aside.

Melt the butter over medium heat in a frying pan. Once melted, add in the beer and give it a stir.

Add the shrimp and sprinkle the seasoning over top the shrimp.

Cook shrimp over the medium heat, flipping and stirring, until shrimp are pink, about 4 to 5 minutes.

Remove from heat and serve with rice pilaf, plain rice, polenta, etc...
Recipe Notes
Don't have Morita chipotle? Use any chipotle smokey type of chili powder.
Don't have Ancho? Use any chili pepper you have.
Can't find a saison? Find a new liquor store! Ha! Or, try a hefeweizen ... or a plain lager may work, but you will lose the spicy fruitiness.
