Kale was trending in 2014. Everything seemed to be about kale: kale salad, kale smoothies, kale in soups, kale pesto, kale in pasta, kale chips, kale pizza, etc…, and yes it is now 2015…so what’s the deal? I am not behind the times, I assure you; I am just not over the kale hype yet! I like it a lot and as much as some other overlooked greens like chard! And that brings me to a sautéed kale and chard recipe that is fast, simple and really freaking good!

I just received some kale and chard in my recent Spud Box and so it seemed like a perfect opportunity to use it as a side and share my recipe! I hope you live in a place where organic produce can be shipped right to your doorstep too! It’s so nice to come home to a box of fresh produce and start thinking about creative ways to use everything! 

Sautéed Kale and Chard

With only a few ingredients this dish is a healthy choice when you are looking for a fast side option and you are tired of the same old salad… or steamed broccoli… or whatever else vegetable you are tired of seeing on your plate. I know I’ve had my fair share of steamed broccoli over the years and needed something new. 

The rainbow chard I had in my Spud delivery was so colourful and pretty!

Sautéed Kale and Chard

Heat a pan and heat the olive oil. Add in the chopped garlic to the hot pan and sauté for about 1 minute or two.
Add in the chard, kale and chicken broth. Cover and sauté for about 5-7 minutes until the greens reduce and are slightly soft. Add vinegar and season with salt and pepper. Remove from heat, sprinkle parmesan cheese and serve hot.

Ingredients

  • 1 bunch kale chopped up (I also removed the rib)
  • 1 bunch chard chopped up
  • 4-6 cloves of garlic chopped
  • 1 tbsp olive oil
  • 1/2 cup chicken stock make it vegetarian and use vegetable stock!
  • 2-3 Tbsp. red wine vinegar
  • 2-3 Tbsp. grated parmesan cheese
  • salt and pepper

Instructions

  1. Heat a pan on medium-to-high heat and add the olive oil. Add chopped garlic and sauté for about 1 minute or two.
  2. Add chard, kale and chicken broth. Cover and sauté for about 5-7 minutes until the greens reduce and are soft.
  3. Add vinegar and season with salt and pepper.
  4. Remove from heat and sprinkle parmesan cheese.
  5. Enjoy!
