Summer Salad Rolls with Peanut Dipping Sauce

I love salad rolls. Anytime I am in a place that has them on the menu, I just have to have them! I don’t know if it is how fresh they taste, or if it is the sweet and savoury peanut dipping sauce, or everything combined; but they are one of my favourite foods. I will have them as an appetizer, snack or as a meal; so it was only natural that I needed to try and make them myself! 

As with most of my recipes, I see what other’s are doing online, and then try to come up with something based on what I have in my fridge; so again, this recipe is inspired by many!

To start I gathered the ingredients for the rolls. One important ingredient is the rice papers themselves. They are cheap and come in a package of like 100… so basically I can make salad rolls for the rest of the year! Yahoo! 🙂

Also I had some red leaf lettuce, cucumber and orange pepper slices, mint and cooked shrimp. Other items can be added in or substituted as well. I have seen cooked noodles, julienne carrots, shredded cabbage, bean sprouts, slices of pork or chicken and basil or cilantro.

Next is the assembly of the salad rolls. The rice paper can be a bit tricky; at least it was for me. If you wet it for too long, it will rip and fall apart. If you don’t wet it long enough, it won’t work with you! Plus the rolling part is a bit of an art… an art that I am not skilled at, I must admit! So I found this great tutorial on how to roll salad rolls… it’s probably best to take note from them. 🙂

Now for the peanut dipping sauce! In a small bowl I mixed hoisin sauce, natural crunchy peanut butter, water, lime juice, soy sauce and hot sauce together to a smooth consistency. The dipping sauce, for me, is a must for salad rolls!

Ingredients

Rolls

  • Rice paper
  • Lettuce I used red leaf
  • Mint
  • Cucumber slices
  • Cooked shrimp
  • Orange pepper slices

Peanut Dipping Sauce

  • 1/2 cup Peanut Butter I used natural, crunchy
  • 1/4 cup Hoisin Sauce
  • 1/4 cup warm water
  • 1 tbsp lime juice
  • 1 tbsp soy sauce
  • dash of hot sauce

Instructions

  1. Wet the rice paper for about 40 - 60 seconds. Lay the rice paper out on a flat surface. Add a piece of lettuce onto the paper and top with a couple slices of cucumber and orange peppers. Add 3 to 4 cooked shrimp and 1 to 2 mint leaves.
  2. Roll like a burrito...or something like that.... or check out the tutorial link I added!

Peanut Dipping Sauce

  1. Add all ingredients into a bowl and mix well.
  2. Enjoy!!
