Pub Snacks Beer Cookie Squares

When you aren't sure what kind of bar snack you want - cookie, bacon, nuts, potato chips? All of this together on one square with caramel - and of course, beer is in the recipe!

Ingredients

  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 tsp vanilla
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 3/4 cup semi-sweet chocolate chips
  • 2 pieces bacon, cooked and crumbled
  • 3 Tbsp stout or porter beer, like Folding Mountain Parkway Porter

Toppings

  • 1/2 cup stout or porter beer, like Folding Mountain Parkway Porter
  • 1 cup plain potato chips, crushed into pieces
  • 2 pieces bacon, cooked and crumbled
  • 1/2 cup chopped, mixed nuts
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line a 13x9 pan with parchment paper and set aside.

  2. Line a cookie sheet with tin foil and place the 4 strips of bacon on. Put bacon in the preheated oven, and cook for 15-20 minutes, flipping once in between, and checking often to ensure it doesn't burn. You want crispy bacon, but not burnt. Once cooked, set aside to cool on pieces of paper towel to drain the fat a little. Crumble when cool and set aside. 

  3. Cream the butter and sugars together until light and fluffy, about 3-4 minutes. Mix in the egg, vanilla extract, and beer. 

  4. Next add the flour and baking soda. Stir in chocolate chips and bacon until combined. Dough should be thick.

  5. Press the cookie dough evenly into the bottom of the parchment lined dish and let set in the fridge for about 20 minutes. Bake for 25 minutes or until the edges are slightly golden. Remove from oven and allow to cool in the pan.

  6. While the bars are cooling, melt the caramels and beer together in a pan over medium heat. Allow the caramel to cook on low for about 5-10 minutes.

  7. Pour the caramel mixture over cookie bars and spread evenly. Sprinkle the potato chips, bacon, and chopped nuts evenly over the caramel before it cools and hardens. 

  8. In a microwaveable bowl, add the chocolate chips and microwave for 10 seconds at a time. Stir the chocolate chips and repeat this until the chips are melted and smoothed. Drizzle melted chocolate evenly over the squares. 

  9. Once the bars are cool, use the parchment paper to lift them out of the dish and cut into squares. Best enjoyed with a stout or porter!
