Mixed Berry Beer Muffins


  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar, packed
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 cup mixed berries I used frozen and thawed them
  • 1/4 cup coconut oil, melted
  • 1/2 cup Greek yogurt
  • 1/2 cup berry beer Can sub with a regular wheat ale
  • 1 egg, beaten


  1. Preheat oven to 350 degrees Fahrenheit. Spray a muffin tin with cooking spray or use muffin liners.

  2. Combine the dry ingredients in a mixing bowl and stir with a whisk to combine.

  3. In a separate mixing bowl, combine all of the wet ingredients, except the berries. Add the mixed wet ingredients to the dry and stir to combine fully.

  4. Fold in the mixed berries until evenly combined.

  5. Drop by spoonfuls into the prepared muffin tin.

  6. Bake in the oven for 13-16 minutes, until a toothpick comes out clean.
