Roasted Tarragon Potatoes

  • 10-12 little potatoes cut up into bite size chunks
  • 2 Tbsp. olive oil
  • Salt and pepper
  • 3 Tbsp. chopped 3 times fresh tarragon


  1. Preheat oven to 400 degrees F.
  2. Put cut up potatoes in a bowl, add olive oil, salt and pepper and 2 Tbsp. of the fresh chopped tarragon and mix well.
  3. Place mixture in casserole dish and roast in the oven for 35 - 40 minutes. Give the potatoes a good stir a couple times in between. Once you can pierce a fork through the potatoes easily, they are ready!
  4. Sprinkle with fresh chopped tarragon and serve!
