Butternut Squash, Caramelized Onion, Feta Pizza

Delicious vegetarian pizza that has the sweetness of squash and caramelized onions paired with the savoury feta.

Ingredients

Squash Sauce

  • 2 cup cubed butternut squash (about 1/2 of a medium sized squash)
  • 1 whole garlic about 8 - 10 cloves
  • 2 Tbsp olive oil
  • Pinch salt and pepper

Caramelized Onions

  • 1 large red onion sliced
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp brown sugar
  • Pinch salt and pepper

Other items

  • Your favourite pizza dough recipe
  • 1/2 cup feta cheese

Instructions

Squash Sauce

  1. Preheat oven to 400 degrees F.
  2. Roast cubed butternut squash with whole garlic cloves, olive oil and salt and pepper in oven for 60 minutes, until very soft and mashable.
  3. Remove from oven, mash or puree into a smooth texture and set aside.

Dough

  1. Meanwhile, use your favourite dough recipe and make your pizza dough.

Caramelized Onions

  1. Once the squash is about half way done roasting, start the onions.
  2. Melt butter in a pot on low heat and add in the olive oil and onions. Cook onions on low heat, continually stirring, for about 20 minutes.
  3. Once they start to caramelize and get a little brown, add in balsamic vinegar, brown sugar and salt and pepper. Continued to cook for another 10 minutes.

Assemble Pizza

  1. Preheat oven to 500 degrees F.
  2. Lay parchment paper on a cookie sheet or pizza pan and drizzle olive oil evenly over. Stretch the dough out onto the pan.
  3. Spread butternut squash mash over pizza dough evenly. Bake in the preheated oven for 5 mins. Turn the pan 180 degrees and bake for another 5 minutes.
  4. Take pizza out of the oven and top evenly with caramelized onions and feta and put back in the oven for another 5 minutes.
  5. Remove from oven, slice and serve hot.
