Author Chews and Brews

  • 1 Tbsp. olive oil
  • 1/2 white onion diced
  • 4-6 cloves garlic minced
  • 2 tsp. smoked paprika
  • 1/2 cup smoked rye porter
  • 1/3 cup brown sugar
  • 3 Tbsp. tomato paste
  • 2 Tbsp. soy sauce
  • 2 Tbsp. cider vinegar
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp. smoked sea salt

  1. Heat olive oil in a sauce pan over medium heat. Add in onion and garlic and cook until starting soften, but not brown, about 15 minutes, while stirring occasionally.
  2. Add in smoked paprika and give it a stir and let cook about a minute.
  3. Add remaining ingredients and stir to mix well. Cook over low-to-medium heat, while stirring occasionally, until sauce starts to thicken, about 20-30 minutes.
  4. Serve with grilled chicken, beef or pork, with a side of your favourite locally craft brew!
