Campfire Cooking Baked Avocados

If you love avocados you will love these stuffed baked ones over the fire!

Ingredients

  • 1 avocado
  • 1 to mato chopped finely
  • 2 Tbsp. crumbled feta cheese
  • 1/2 tsp. Aleppo chiles
  • Salt and pepper to taste

Instructions

  1. Cut the avocado in half and remove the pit.
  2. Scrape some of the avocado out and into a bowl, leaving an "avocado bowl". Add chopped tomatoes, feta cheese, salt, pepper and Aleppo chilies and mix with scooped avocado.
  3. Fill avocado bowls with mixture and wrap in foil - tent the foil over the top so the cheese doesn't melt. Place over hot coals or on a preheated barbecue for 15 - 20 minutes.
  4. Enjoy!
