Chicken Noodle Soup
A delicious classic chicken noodle soup that will cheer up a sad friend, liven up a sick spouse or turn your mood around if you are grouchy.

chicken broth
homemade, or store bought

chicken breasts

Tbsp
olive oil

of salt
pepper and garlic powder

each of chopped onion
carrot and celery

1.5
cup
of dried pasta noodles

Thyme
-
Basil
-
Oregano

Season chicken breasts with salt, pepper and garlic powder.

Heat 1 Tbsp of olive oil in a skillet and add seasoned chicken breast. Cook thoroughly and set aside.

Heat remaining olive oil in a soup pot and add the mirepoux, thyme, basil and oregano and cook until vegetable start to soften.

Add chicken broth and cooked chicken, and bring to a boil.

Add pasta noodles and let soup simmer until pasta noodles are cooked, about 8-10 minutes.

Season with salt and pepper if needed, and serve!
Use any kind of chicken - pick up a rotisserie chicken, roast your own chicken with herbs, etc...
I used whole grain egg noodles, but you can use any kind of noodle you like!
