Chicken Noodle Soup

A delicious classic chicken noodle soup that will cheer up a sad friend, liven up a sick spouse or turn your mood around if you are grouchy.

Ingredients

  • 6 cups chicken broth homemade, or store bought
  • 4 chicken breasts
  • 2 Tbsp olive oil
  • pinch of salt pepper and garlic powder
  • 1 cup each of chopped onion carrot and celery
  • 1.5 cup of dried pasta noodles
  • Thyme
  • Basil
  • Oregano

Instructions

  1. Season chicken breasts with salt, pepper and garlic powder.
  2. Heat 1 Tbsp of olive oil in a skillet and add seasoned chicken breast. Cook thoroughly and set aside.
  3. Heat remaining olive oil in a soup pot and add the mirepoux, thyme, basil and oregano and cook until vegetable start to soften.
  4. Add chicken broth and cooked chicken, and bring to a boil.
  5. Add pasta noodles and let soup simmer until pasta noodles are cooked, about 8-10 minutes.
  6. Season with salt and pepper if needed, and serve!

Recipe Notes

Use any kind of chicken - pick up a rotisserie chicken, roast your own chicken with herbs, etc...
I used whole grain egg noodles, but you can use any kind of noodle you like!
