Lemony Lentil Soup
Hearty, filling, rich tasting, lemony lentil soup!

large carrots
diced

large onion
diced

4
clove
garlic
minced

2
green peppers
diced

3
cup
red lentils
rinsed

4
cup
chicken broth
-
3
cup
water
-
1
tsp
each ground rosemary
coriander, Aleppo chilies

Salt and pepper to taste

Juice and zest of one lemon.

Put all ingredients except for the lemon juice and zest, into the crockpot.

Cover and set to low; cook for 5-6 hours, until lentils are soft.

Stir in lemon juice and zest and season with additional salt and pepper if needed.

Ladle into bowls and enjoy!
Make this vegetarian by using vegetable broth instead.
