Rhubarb Shrub

A rhubarb shrub; great addition to make a cocktail interesting

Ingredients

  • 1.5 cups rhubarb, chopped
  • 90 mL sugar
  • 60 mL water
  • 60 mL champagne vinegar

Instructions

  1. Combine the chopped rhubarb, water and sugar in a sauce pan and cook over medium heat while continuing to stir, letting the rhubarb break down.
  2. Bring to a boil, then reduce heat and let simmer for 10 minutes.
  3. Remove from heat and let cool. Once cooled, strain through a fine meshed strainer into a mason jar.
  4. Add in the vinegar and mix well. Keep in the fridge until ready to use in a cocktail.
