Put the ground chicken in a mixing bowl and set aside.

Mix together all of the herbs and spices in a mortar and pestle. You alternatively can use a spice grinder, or use already ground herbs and spices.

Add the ground herbs and spices into the ground chicken and mix well until the spices are evenly distributed throughout the meat. Add in a tablespoon of olive oil for moisture and mix well.

Shape the mixture into small patties. I was able to make four small patties.

Refrigerate patties until you are ready to make breakfast - the longer they sit (overnight is perfect) the more flavours of the herbs and spices will meld.

Heat 1/2 tablespoon of olive oil in a frying pan on medium heat. Place patties into the hot frying pan and cook until browned on each side, and middle is no longer pink. Cooking time will vary based on the thickness of the patty - I made four patties and it took about 7 - 8 minutes per side to cook thoroughly.

Serve for breakfast or freeze and save for later!
