Frittata ~ From the Fridge to the Pan

A great way to clean out the fridge and make a delicious meal! This recipe is based on what I had in my fridge at the time, and can be altered according to what is in your fridge - as long as you have eggs, anything goes!

Ingredients

  • 2 Tbsp olive oil
  • 1/4 cup purple onion diced
  • 8 - 10 medium sized mushrooms halved and sliced
  • 3 sausage links chopped into bite-sized chunks
  • 2 cups fresh spinach torn into pieces
  • 6 eggs beaten
  • 1/2 cup feta cheese crumbled
  • 2 - 3 Tbsp. grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Heat up cast iron frying pan and add olive oil. Once heated, add onion and sausage and let cook, stirring occasionally, until onions soften and sausage browns, about 15 minutes.
  3. Add chopped mushrooms and cook until soft, another 5 minutes.
  4. Add the spinach and stir while cooking until just wilted, about 2 minutes.
  5. Add in beaten eggs and feta cheese. Push feta down into mixture (don't stir). Sprinkle the mixture with parmesan cheese and salt and pepper to taste.
  6. Let cook until the eggs just start pulling slightly away from the pan.
  7. Transfer cast iron pan with frittata into the oven and bake until cooked through, about 15 minutes.
  8. Serve and enjoy!

Use your favourite sausage flavour
Mix it up using different cheeses or vegetables!
