Mild and meaty mahi-mahi grilled with a sweet mango mint salsa

Ingredients
Fish
2mahi-mahi fish fillets
Saltpepper and olive oil
Mango Mint Salsa
1fresh mango choppedor 3/4 cup frozen mango pieces
1/4cupred bell pepperchopped
1/4cupfresh mintfinely chopped
1Tbsp.red onionfinely chopped
1Tbsp.honey
1Tbsp.champagne vinegar
1limejuiced
Instructions
Fish
Drizzle olive oil over the mahi-mahi fillets and season with salt and pepper. Place on preheated grill on medium heat and cook for about 20 minutes, until a fork easily flakes the fish.
Mango Mint Salsa
In a small bowl add in the chopped mango, red onion, red pepper, mint, honey, vinegar and lime juice and stir well. Set aside until the mahi-mahi is done.
Once the mah-mahi is cooked, plate and top with the fresh mango mint salsa.
Recipe Notes
Use white wine vinegar instead, if you don't have champagne vinegar. Mango mint salsa would be great on any white fish - try it with halibut, tilapia, basa or sole!
