Grilled Mahi-Mahi with Mango Mint Salsa

Ingredients

Fish

  • 2 mahi-mahi fish fillets
  • Salt pepper and olive oil

Mango Mint Salsa

  • 1 fresh mango chopped or 3/4 cup frozen mango pieces
  • 1/4 cup red bell pepper chopped
  • 1/4 cup fresh mint finely chopped
  • 1 Tbsp. red onion finely chopped
  • 1 Tbsp. honey
  • 1 Tbsp. champagne vinegar
  • 1 lime juiced

Instructions

Fish

  1. Drizzle olive oil over the mahi-mahi fillets and season with salt and pepper. Place on preheated grill on medium heat and cook for about 20 minutes, until a fork easily flakes the fish.

Mango Mint Salsa

  1. In a small bowl add in the chopped mango, red onion, red pepper, mint, honey, vinegar and lime juice and stir well. Set aside until the mahi-mahi is done.
  2. Once the mah-mahi is cooked, plate and top with the fresh mango mint salsa.

Recipe Notes

Use white wine vinegar instead, if you don't have champagne vinegar.
Mango mint salsa would be great on any white fish - try it with halibut, tilapia, basa or sole!
