Lemon Thyme Chicken with Beer

Juicy, lean chicken breasts marinated in beer and olive oil, seasoned simply, and finished with fresh lemon and thyme — this dish is light, easy, and full of flavor.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1/4 cup light farmhouse ale or simple lager
  • 2 Tbsp olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon plus zest
  • 2 –3 sprigs fresh thyme

Instructions

  1. In a bowl, mix the half of the lemon juice, the zest, olive oil, beer, half of the thyme, salt, and pepper. Add chicken breasts and marinate for at least 15 minutes (up to 1 hour if you have the time).
  2. Remove chicken from marinade and place on a preheated grill.
  3. Grill for 7-8 minutes per side, until internal temp reaches 74°C (165°F)
  4. Remove from heat, drizzle with remaining fresh lemon juice, and sprinkle thyme on top. Serve hot.
