Preheat oven to 400 degrees F.

Put cut up potatoes in a bowl, add olive oil, salt and pepper and 2 Tbsp. of the fresh chopped tarragon and mix well.

Place mixture in casserole dish and roast in the oven for 35 - 40 minutes. Give the potatoes a good stir a couple times in between. Once you can pierce a fork through the potatoes easily, they are ready!

Sprinkle with fresh chopped tarragon and serve!
