Sesame Soy Grilled Beef Skewers

I like to grill a lot, and especially when I come home from work on a hot summer day – keep cooking out of the kitchen when it’s hot out, right?! These sesame soy grilled beef skewers are perfect for those days when you want something quick and not made in the kitchen. The flavours are ones that I like to work with a lot, like ginger root, soy sauce, garlic, sesame seeds and oil, and rice vinegar. They work well together to make a sweet and salty combo.

Grilling the beef and the vegetables makes everything crispy on the outside, holding in all of the tasty flavours and releasing them when you bite down, like a little explosion in your mouth in each bite. The marinade for the beef and vegetables is sweet and salty, and makes the beef tender and juicy.

The assortment of vegetables I used was zucchini and mushrooms, which took on the savoury marinade flavours; cherry tomatoes that pop bright sweet juices; and white onion and orange pepper, both giving a peppery bite and a crunch to the skewer. All of these flavours are balanced out on a bed of brown rice and given a good sprinkle of nutty-flavoured toasted sesame seeds.

Sesame Soy Grilled Beef Skewers

Sweet and salty beef and vegetable skewers, grilled to perfection.

Ingredients

  • 2 pounds of beef cut up into chunks
  • 2 pounds of assorted vegetables chopped in large chunks (e.g. mushroom, cherry tomato, zucchini, onion, peppers)
  • 1/3 cup water
  • 1/2 cup soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp fresh shaved ginger
  • 1 tbsp fresh minced garlic
  • 1 green onion chopped finely
  • Juice of two limes
  • Sriracha to taste

Instructions

  1. Mix all marinade ingredients together.
  2. Put beef chunks in a bowl and add in 3/4 of marinade to bowl, and let sit, stirring occasionally, for 1 hour.
  3. Put vegetables in another dish and add remaining marinade and let sit as well, also stirring occasionally.
  4. Meanwhile, soak wooden skewers in water for at least 20 minutes.
  5. Put meat and vegetables on skewers.
  6. Grill for 20 minutes, flipping occasionally.
  7. Serve on a bed of brown rice and sprinkle toasted sesame seeds over dish.
