Chipotle Salmon with Avocado, Apple, Yam Salsa

One of my favourite things about the liquor stores in British Columbia, besides the awesome craft beer selection, is that you can pick up a seasonal magazine called Taste. It’s full of wine, spirits and beer reviews; and tonnes of recipes as well! That’s where I found the inspiration for this chipotle salmon with avocado, apple, yam salsa recipe. I didn’t change their recipe too much; I used avocado oil instead of olive oil; parsley instead of cilantro; an Ambrosia apple instead of a Gala; and I added ground coriander to the chipotle sauce and minced jalapeno to the salsa. It was fantastic. Like seriously the best way I have had salmon ever, and I love salmon. This is now a staple recipe in our house! I’ve done a fish with chopped salsa like this before – Mahi Mahi with Mango Mint Salsa – and that recipe was awesome so it was no surprise to use that this one was a hit too!

Chipotle Salmon with Avocado, Apple, Yam Salsa

First off make the salsa. Cook the chopped up yam pieces in a small oven proof dish at 350 degrees Fahrenheit for 20 – 25 minutes, until soft, but not mushy. 

Once the cooked yam is cooled, put in a small bowl and add in the diced avocado, diced apple, diced purple onion, minced jalapeno and minced parsley. In another small bowl, combine the lime juice, avocado oil, Adobo sauce, salt and pepper. Pour over chopped avocado, apple and yam mixture and toss to combine. Cover with plastic wrap, refrigerate and start the salmon. 

Chipotle Salmon

Preheat the oven to 275 degrees Fahrenheit. In a small bowl combine avocado oil, maple syrup, chopped chipotle pepper and Adobo sauce, minced garlic, lime juice and zest, ground cumin, coriander, salt and pepper and whisk to mix well. 

Note: I am using Noble bourbon maple syrup which is so good! But you can use regular maple syrup if you don’t happen to have any of this tasty stuff on hand. 

Line a cookie sheet with parchment paper and place salmon fillets on the tray. Pour chipotle sauce mixture evenly over salmon filets. 

Bake in preheated oven for 15 – 18 minutes, until salmon flakes with a fork. Plate salmon and top with the avocado, apple, yam salsa. Enjoy with a side of rice or how about that purple cabbage coleslaw! Yeah that recipe is going to be coming soon!! Don’t miss it!

Ingredients

Avocado, Apple, Yam Salsa

  • 1 small yam peeled and diced
  • 1 avocado peeled, cored and diced
  • 1 Ambrosia apple cored, unpeeled and diced
  • 1/4 cup parsley minced
  • 2 Tbsp. purple onion minced
  • 1/2 jalapeno pepper minced
  • 2 Tbsp. lime juice fresh squeezed
  • 1 Tbsp. avocado oil
  • 2 tsp Adobo sauce from canned chipotle peppers
  • Salt and pepper to taste

Chipotle Salmon

  • 2 salmon filets
  • 1 Tbsp. avocado oil
  • 1 Tbsp. bourbon maple syrup
  • 1/2 chipotle pepper minced and 1 tsp of the Adobo sauce, from canned chipotle peppers
  • 1/2 lime juiced and it's zest
  • 1 garlic clove minced
  • 1/4 tsp each ground cumin and coriander
  • Salt and pepper to taste

Instructions

  1. Cook the diced yam pieces in a lightly greased, small oven proof dish at 350 degrees Fahrenheit for 20 - 25 minutes, until soft, but not mushy. Set aside to let cool.
  2. Once the cooked yam is cooled, put in a small bowl and add in the diced avocado, diced apple, diced purple onion, minced jalapeno and minced parsley.
  3. In another small bowl, combine the lime juice, avocado oil, Adobo sauce, salt and pepper. Pour over chopped avocado, apple and yam mixture and toss to combine.
  4. Cover with plastic wrap, refrigerate and start the salmon.

Chipotle Salmon

  1. Preheat the oven to 275 degrees Fahrenheit.
